Chicken/turkey salad with tarragon and grapes

1 lb cooked chicken/ turkey

5 fl oz mayonnaise

3 fl oz double cream

4 oz green grapes, halved

1 heaped teaspoon tarragon (fresh): If using dried, 1/2 heaped, soaked in warm water for 5 mins, then squeezed dry in kitchen paper

3 spring onions

salt/ pepper (optional mustard seeds)




rip/cut chicken/turkey into chunks

place in bowl with seasoning

in seperate bowl mix mayo, cream, tarragon and finely chopped spring onions.

add sauce to chicken pieces.

Arrange on a plate of crisp lettuce and garnish with grapes.
