This is a kind of Mexican Tortilla Gallete, inspired when I noticed that my iron frying pan is the same diameter as the Light Tortilla Wraps I buy. I'm going to post this as a light diet-friendly version, but you could easily make it full fat! You need- #1pkt Tortilla wraps #A batch of chili con carne, without beans (I make mine with extra-lean mince and cook slowly for at least 2 hours with a bottle of brown ale slung in) reduced down so it is firm. # A large can Refried Beans. # A large handful half fat cheddar, grated. # A pan/frying pan that is roughly same diameter as your wraps and is ovenproof. Spritz the pan with oil and warm so that it spreads, then layer a wrap then chili three times. Add a layer of the Refried Beans on top and another wrap. Finish with the cheese. Put in a moderate oven for 25 mins. To serve, cut it in wedges and a tomato and onion salad on the side goes well. Quote Link to comment Share on other sites More sharing options...
