Charlottechicken Posted April 28, 2010 Share Posted April 28, 2010 I'm interested in making some mint cordial as there's plenty of mint growing in the garden, but I can't find a recipe on the internet as yet. Anyone have any idea how to make it? If not, I'll be experimenting with mint leaves and a syrup, just not sure how many leaves to use. Charlottechicken Posted April 30, 2010 Author Share Posted April 30, 2010 Being the paranoid type, and realising I may be suffering from CRAFT (can't remember a flippin' thing) after my op, though I would copy and paste the recipe, just in case From Palachinka's blog Mint Cordial (Syrup) 200 g fresh mint* 1 kg sugar 500 ml water Co"Ooops, word censored!"ly chop mint (with the stalks) and put it in a large pot with sugar and water. Let boil, then reduce the heat to medium and continue to cook for another 15 minutes. Remove from heat and leave covered overnight. Strain through a gauze. Keep in the fridge for up to two weeks. To prepare 200 ml of drink pour about 40 ml of syrup into glass and fill the rest with ice cold water. This syrup can be also used for flavoring creams, marshmallows, ice creams, cocktails... *Whenever recipe calls for mint I use horse mint. Simply, I have it in my yard. You can make this with some other species, for example common mint, but whatever species you use, you won't be able to get green color for your syrup. I did manage to make it green........I finely chopped a big handful of mint and added it once the cordial had started to cool. Left it overnight and then strained it. I think I'll make some more and freeze it - it will be nice on ice-cream if we ever get any summer! - I'm not making ice-cream in weather like we have at the moment! Not a great colour though I got just over a litre of cordial out of the recipe, I'm surprised as I thought it would be less than that I can see why you liked it Lesley.
