Toots Posted July 12, 2010 Share Posted July 12, 2010 Forgive me if this is a daft question I have been thinking about what to dowith the honey i have collected and i know the 2 ways to "process" the honey, either creaming or holding it at a stable temperature for 2 days. From what i understand this is because of the crystals that will form in the honey. If you cream the honey it breaks them up into smaller crystals and so stops it setting quite so solid. From my limited knowledge of crystals the quicker the crystal is formed the smaller it is. so could you freeze a batch and form the crystals quickly?
