food for camping help please

Hello, we're off camping this week just me mine and my niece :) anyway, 1st night I am taking a cooked chickn, some bbq stuff - sausages, burges, rolls and rice. so thats tonight sorted.... its the 2nd night Im stuck - sont really want sausages and burger again!! we have a bbq and 2 gas hobs to cook on....

 

so the question is - what lovely ideas do you lovely people have for the 2nd day??? theres 5 of us

Quick Salmon fish cakes

 

1 large tin of salmon (red or pink)

50g of SR flour (I take this weighted out in a small bag)

2 eggs beaten

2 tbsp lemon juice (I have missed this out when camping and its fine)

Salt & pepper

 

1.Drain salmon pick out any skin and big bones. Mash with fork

2.Add eggs, lemon juice, seasoning and flour and mix well

3.Cover bottom of frying pan with oil and drop spoonfuls of mixture into hot oil. Press gently into shape and turn once.

 

When camping we eat this with pasta with pesto stir in.

I'm not much help - I would just BBQ again!! Limit the amount of cleaning up to do - plus OH does the BBQ so I don't have to cook :lol:

 

But would vary the food - some ribs, or kebabs - that sort of thing.

 

But then I also believe you can't have enough sausages - as long as they are good quality ones! :D

 

Otherwise, I agree with a frozen batch of bolognese and some pasta - was very quick and easy for Scout camps too as all done in advance!

We quite often take a frozen vegetable curry, which as has been said helps to keep the rest of the coolbox cold and there is nothing in it which will come to harm once defrosted. We then cook some rice, which I prefer to pasta when camping because if you cook it by the absorbption method you have no water to drain away. I always fear tipping the pasta out with the water. :roll:

 

If you have 2 gas rings it is not that hard to knock up a chilli or curry from scratch to serve with rice. We sometimes do pilaff rice dishes too because they are cooked all in one pan, rissotto etc can work too. Cous Cous is a good stand by too, the quick cook ones and you can also get flavoured ones. We also eat quite a few omelettes when we are camping, we do them for breakfast Jamie Oliver style fry bacon sausages and mushrooms then add beaten eggs and make a rather messy but tasty mixed up cooked breakfast.

I'm with the pasta suggestions, a staple meal on our camping holidays. One ring for the pasta, one for what ever sauce you decide to make. I sometimes buy the tomato and marscapone sauce but add a tin of tuna to it before I stir it through with the pasta. Always a winner! :D

Apart from the sleeping in tents bit, what are you going to be doing on your trip? Are you going to be energetic and go walking or cycling or are you going to be just having a relaxing mosey on round? Reason for asking is to work out whether you want energy-rich comfort food or something a little lighter.

 

Also, what storage facilities do you have? Do you have a fancy in-car fridge or are you reliant on coolbags and freezer packs? Some trout cooked in foil parcels would be lovely, but only if it can be kept fresh until it's needed.

 

Irrespective, though, consider either making up some tabbouleh as an accompaniment or taking some couscous. Life's too short to worry about cooking anything more than the main dish, especially since the whole reason for your going camping is so you get a holiday as well as everyone else.

We tend to cook a lot of risotto when we go camping. You can pretty much do it all in one pan. Just melt some butter and stir the rice around for 2 mins, then add some water and cook for about 20 mins (keep adding water as the rice absorbs it). You can bung in a stock cube and any veggies you like.
