Mackerel and potato bake

I got 4 lovely filleted mackerel for the princely sum of £3.50 and raided the fridge for inspiration, came up with this-

 

4 filleted mackerel, grilled open on flesh side

1 leek, chopped

1 large onion, sliced

small pot creme fraiche

10 (ish) new potatoes, sliced thickly and boiled in veg stock.

 

Let the mackerel cool and remove skin and dark meat, break up into long flakes (fingers best for this) place in a bowl with the drained cooked potatoes.

Saute leek and onion in a little oil until soft and starting to brown, remove from heat and add creme fraiche. Season with salt and plenty of black pepper. Add to bowl and mix everything together gently.

 

Grease an ovenproof dish, tip mix in and spread out. Bake in a lowish medium oven for 20-30 mins.

 

Serves 2 as a complete meal, 3 with veg accompaniments. My old HuskyX got the fish offcuts and skin.

Sounds nice, I love mackerel.

 

We did a smoked haddock dish with potatoes last night.

 

2 onions finely sliced, fried over medium heat for 5 minutes,4-5 medium potatoes sliced into 3mm slices fried with the onions for another 5 minutes then add 450ml water and cook until potato slices are nearly tender. Place fish on top in fairly large chunks and cook for another 5 minutes. Sprinkle with a generous hanful of chopped parley and serve.

 

We used 600g of fish and served it with carrots and brocolli, it served 5 people.

 

I might try it with a little paprika next time or some milk, but it was tasty and comforting as it was.

sounds yum! It must be a night for sliced potato bakes as we had cooked sliced potatoes layered in a dish with tinned toms and minced beef - it was a cross between a cottage pie and a lasagne, sans pasta. Then it had a yoghurt topping (nat yog, egg s&p). It was from my Dairy home cook book. Was quite nice, but will do it differently next time (ie thinly sliced uncooked potatoes, bolognaise sauce layered and then baked in the oven).
