missuscluck Posted February 5, 2011 Share Posted February 5, 2011 I have been trying to make an Egg Custard Tart for my Hubby. Its his favourite pud and I have never attempted to make it for him. Cant stand them myself I have tried an old recipe from a 1970's traditional cookery book and tried using the 'Custard' bit from the Baked Custard recipe in Nigella's Kitchen book but both turned out too scrambled egg like. redhotchick Posted February 10, 2011 Share Posted February 10, 2011 I can't find my mum's recipe for Egg Custard Tart but I did find the following: 2 whole eggs plus 2 yolks will set 1 pint of milk. Also, yolks thicken at a higher temperature (149 F) than whites (144 F). So the cooking temperature is important. If you find a successful recipe please do let me know. Have found this one http://britishfood.about.com/od/adrecipes/r/custardtart.htm which I have made and it set properly not like the previous scrambled eggy mess of the last few trys. I didnt follow the cooking instruction exactly though as I was running out of time and had to pick my daughter up so cooked at 180 degrees for 10 mins then turned down to 140 degrees and cooked for and hour and a bit. Seemed to do the trick I dont like egg custard tarts at all but my OH who is the egg custard fan seemed to approve Quote Link to comment Share on other sites More sharing options...

Angie Posted February 18, 2011 Share Posted February 18, 2011 Baked Custard. 2 eggs 1oz sugar vanilla essence 3/4 pt milk nutmeg time 1 1/2 ---2 hrs Gas No 1 elec 140 fan 120 Heat the milk,(hot not boiling) beat the eggs with the sugar and vanilla essence. add the milk.
