Shortbread recipes.

I use a creamed recipe and it makes lovely biscuits.

 

2 oz caster sugar

4 oz soft butter

8 oz plain flour

 

Cream the butter and sugar together until pale and fluffy. Add the flour and mix well with a wooden spoon.

 

Roll out on a floured surface to a 1/4 inch thickness and cut out 2" rounds.

Bake at 190C for 18-20 minutes until a very pale golden colour (hardly any colour)

Sprinkle with extra sugar while hot and place biscuits on a wire rack to cool.

 

Makes 20 biscuits - I usually make double the amount :oops:
