The Dogmother Posted June 8, 2011 Share Posted June 8, 2011 I had a lovely croquembouche wedding cake all those years ago.. made by a friend, she used some sort of silicone cone for the centre. The cake itself was just a show item, with trays of choux balls made up for serving. I only have old photos of it, but it looked a bit like this one... balls filled with confectioners' custard and encased in spun sugar dotted with wild flowers.
