Muffins question

They were pretty good, in my humble opinion :lol: . I'm not much of a muffin connossieur though :oops: .

 

The only mistake I made was making double the amount (cos I had 4 really ripe bananas), and cooking them in 2 batches. The first batch turned out a lot nicer (they also had muffin cases which I'd run out of for the second batch!)

 

I just stirred the choc drops in at the final mixing.

I use this one, I think Poet posted it a while ago, and it has always worked well for me:

2 tsps baking powder

175g - 185g castor sugar (depends how sweet you like them!)

1 egg

250ml milk

250g plain flour

90ml vegetable oil

 

Beat the egg and combine with the milk and oil (for a richer taste use half milk, half plain yoghurt)

In a bowl sift the flour and baking powder, add the sugar.

Add the liquid mixture and combine without over mixing.

Makes about a dozen muffins - bake for 20 - 25 minutes in a hot oven.

 

You can add any flavourings you want - I've added two ripe mashed bananas and chocolate chips to this one with a bit of mixed spice, also: pureed apples and cinnamon (delicious :drool: ), fresh or frozen raspberries and white choc chips, blueberries and vanilla essence.

Thanks - but decided on doing the Whacky cake muffins - minus any cream topping, but with choc chips sprinkled on the top part way through cooking.

Pleased to say I won 1st prize at the Betley show for my Whacky cake muffins! :dance:
