Delia's Christmas Cake

Did anyone else make one of these this year, and if so what did you think?

 

I was seriously underwhelmed. The raisins are clearly not seedless because it is like eating gravel...I feel a letter of complaint coming on....

 

That'll teach me to take a shortcut!

I didn't use the kit this year,as I had most of the necessary ingredients in my cupboards anyhow,but it is the cake I have made for the past 8 years or so,with no problems.

I did use a kit last year & it was fine :-)

One thing I would recommend is using the recipe from Delias book,adding up the basic fruits & buying the Waitrose mixed fruit pack to the same weight ... works a treat & much cheaper!

I always make Delia's classic cake, I love it, it needs to be made with good quality fruit, fresh oranges and lemons, black treacle and plenty of brandy. Mine is so much nicer this year than last and I have no idea why, I have to make 1.5 times the mix for the 5 of us because we all love it, but it still cooks in 4 hours, I use the conventional setting on my oven. It also benefits from a couple of generous brandy feeds before icing.

 

I suspect that the kit was inferior quality, did it call for fresh orange and lemon zest?

 

Her Creole cake is lovely too, but very boozy. :D

I've just bought the kit for £2.50, I reckoned I wouldn't get the fruit on its own for that. It says 'best before end February' so it's got a fair bit of shelf-life, I happen to have oranges/lemons left from Christmas so I might make it and freeze it ... on the other hand, it says it needs five eggs, and that's going to be hard at the moment!

 

I wouldn't normally buy a kit, I've always got dried fruit etc in the cupboard for baking.
