Last winter was the first time I have ever found frozen eggs, so it will have to be pretty cold before this happens - average winter frosts won't affect them. I think it was -12 or something, and they'd been left in the Eglu once the hens got up, if I had been able to collect them as soon as they'd been laid then they wouldn't have frozen.

 

If they freeze, the shells will crack - that was how I first realised they'd frozen last year - and on that basis they are not safe to eat because the contents could have become contaminated.
