Christmas puddings

Made my Christmas puddings today, one is steaming away (in the pressure cooker) as I type. Didn't have quite enough citrus peel so made it up with some glacé ginger that I found in the cupboard, after I put the brandy and rum in there was only a little bit left in each bottle so I chucked that in as well for good measure :lol: .

I think making the puddings are one of my favourite bits of Christmas, apart from eating them of course :D .

We make ours too, from a recipe allegedly from the 1770s, it was in a newspaper a few years ago. We make 2 at a time, and if we don't eat both then the 2nd one is used the following Xmas - its always delicious. Making Xmas pud is OH's domain, its not difficult at all, just requires quite a few ingredients and lots of mixing. We boil (simmer) ours in a saucepan for hours, a pressure cooker would be much quicker. I love Christmas pud, my Nan made ours all through my life till about 15 years ago, and although I can't honestly say homemade is masses better than a shop bought one, you do get the pleasure of doing it, and are totally sure what you've put in it.

Think I'm at home this year, and I think that I ate the 'spare' pudding for last year's Christmas dinner, so perhaps I should get going! I always use Delia's recipe as well.

 

A useful tip - because I work full time and I am out a lot, I don't always have time to boil a pudding for the requisite number of hours. It works perfectly well if you boil it for, say, 3 hours one night and 3 hours the next rather than 6 hours (or whatever it takes) in one hit - as long as it gets the right time in total. It is nigh on impossible for me to be in the house for long enough to do a full boil, and I discovered some years ago that this works just as well.

I'm torn, went away to SIL last year so took a heston one wth candied orange from waitrose and it was wonderful :drool: But I always make puddings and love the ritual and we are at home this year :think:

....and that is what I will be making this year! Sounds delish! I am another Delia classic pudding maker, but time to ring in the changes :D
