Mrs Frugal
What am I doing wrong. I can make mayonnaise standing on my head but just can't do it today. I've wasted two lovely egg yolks and half a pint of olive oil. It just won't thicken. Help!!!!
Mrs Frugal
The recipe I use says put an egg yolk in a bowl, add 1/2 tsp mustard powder, 1/2 tsp salt and 1 tsp lemon juice. Beat together. Slowly drip in 1/4 pint olive oil, beating all the time. Add more lemon juice when oil is all added if it's too thick. Thick's not a problem at the moment! It just won't thicken! What am I doing wrong ???
Guest
If you are adding the oil too quickly then it won't thicken.
Mrs Frugal
I thought I was adding it slowly but maybe you're right. I give up! Bloomin' mayonnaise! This is the second week running it's gone down the pluggle !

SarahJo
Have a Cake ... Plain with Smarties ontop, or G&B choc, with white buttons . Freshly made ..... don't ask why, as the kitchen is in bits and the kids have gone swimming .
Mrs Frugal
Might just do that Sarah! Mayonnaise would have been lovely with the poached salmon but cake's lovely on it's own ! As is chocolate . And a bottle of red wine !

Nicola H
Kate I use a Prue Leith recipe for mayonnaise I will post it in the recipe section................ I think that the vinegar helps it to thicken..........Good luck it is a pain when it doesn't work.
Lesley
I don't know Kate? As you know, I can make mayonnaise which just grows and grows until it overflows the processor It was thick though. I use vinegar, not lemon but it shouldn't make any difference
Mrs Frugal
Thanks Nicola and Lesley! I'll see if vinegar makes a difference. I've made it with either vinegar or lemon juice before with no problems so I've no idea why I can't make it all of a sudden. I'll try your recipe.
