Beetroot Relish Makes 8lb 5lb raw beetroot, washed and peeled 3 and a half lbs granulated sugar 2 to 3 oz fresh ginger root, finely grated Juice and rind of 4 lemons 8oz blanched almonds, slivered (optional) Co"Ooops, word censored!"ly mince or grate the beetroot, just cover with water and simmer in a heavy saucepan until tender. This should take the best part of an hour, Add sugar, ginger and lemon rind and juice. Remove from the heat when sugar is dissolved and stir in slivered almonds. Pot in sterile jars.
