Yummy Carrot Cake

Today was my un-birthday (as are 363 other days a year) So I made an un-birthday cake. It was a lovely carrot cake with a proper cream cheese and icing sugar topping. It looked so pretty I joined photobucket so that I could share it with you all.

It's all gone! I took it into work and it went down very well!

No presents on an un-birthday!

It was a 300g tub of philadelphia that I used. It was just the right amount.

 

I have a trillion recipes for carrot cake, I've been collecting them! This one used 200g of eggs (3 assorted sized eggs weighed in their shells)

Equal quantities of self raising flour, butter and sugar. A teaspoon of baking powder, and a scant teaspoon of salt. 14oz of carrots finally grated. (I got a bit fed up grating carrots by hand so left a couple out) A teaspoon of mixed spice, a teaspoon of ground cinnamon. A handful of dried mixed fruit, some nuts chopped up (brazil, pecan, walnut)

pre heat the oven to 180 C

All the dry ingredients go in, use a sieve and a large bowl.

Then add the carrots, nuts and dried fruit, mix well

add the melted butter and eggs, mix it all together.

I used a deep 9" tin, greased and floured and baked it for 40 minutes. You could use loaf tins, 2 x lb or 1 x 2lb

I think I lowered the temperature after about half an hour and then tested it with a skewer after 40 minutes. It was supposed to take an hour!

I made it one day, iced it the next and it was all gone the day after that!

For the icing beat the cream cheese till soft, add icing sugar to taste. I used about 6 dessert spoons, sieved and then beat in.

If I'd had an orange, the zest tastes lovely in the cake.

I used white flour, white caster sugar and melted butter,

 

You can use wholemeal flour, brown sugar and oil instead.

 

I prefer melted butter to oil.

Depending what the occasion is whether I use white or wholemeal flour.

 

I quite like the wholesomeness of this cake when I use wholemeal flour, but it is a matter of personal taste (and what you have in!)
