Lesley Posted July 18, 2008 Share Posted July 18, 2008 (edited) We cook ours in English Cider. Coat the portions in flour and fry until golden. Remove from the pan. Fry an onion and when starting to colour add a sliced apple. Add stock/cider and carrots and the rabbit and cook as for stew. My aunty did this when i was younger, when she cooked duck for the family i was horrified and thought she had nabbed one from the canal down the road! Probably a wise move Rabbit does have a very distinctive taste, I am used to it as my mother used to cook rabbit when I was a child, until that horrible disease wiped them out, mixamatosis? something like that. They said no, until I ate it - then admiTed it had rabbit in it. I was not happy at all! I bet they wouldn't have been happy eating lurcher or retriever!
