To watch and learn what all the different cuts of meat are & how & where from they are cut. From carcass to table. Last night was lamb, quite a large sized lamb. The butcher cut the breast, the fillet (very small thing), the shoulder, chump steaks, lamb chops. He boned & rolled a leg of lamb, showed us how to tye the knots & also made a guard of honour (2 racks of lamb together). At the end we had tasters. Yummy. Next week is pork & poultry (full pig & a chicken / turkey) Following week is Beef (quarter cow). Nearer to Christmas they are doing one on Game. It was really good. We buy 1/2 a lamb every few months and it takes me ages to label and work out what is what I would love to learn and understand the cuts better. Would also be really good to know how to bone a chicken or joint it, I have tried doing this from books in the past and have failed badly . Sounds great lucky you.
