It turned out really well and was simple to do so thought i'd pass the recipe on. chickencam Posted October 17, 2008 Share Posted October 17, 2008 I may give this a go, although people with underactive thyroids are not meant to eat horseradish, not sure why but a little of what you fancy and all that. My OH made a pickled beetroot recipe a couple of months ago that had grated horseradish layered with diced beetroot, it is really yummy, but our homegrown horseradish didn't have much kick, it is better picked in the winter when the leaves have died down I think.
