Cooking on a budget

I think that 'Help, what can I cook on a strict budget' has come up a few times. I wondered seeing as times are hard for most at the moment weather it is worth having a sticky with recipe suggestions for thrifty meal ideas. We could also post news of any good foodie offers we have seen in the supermarkets. Im often stuck for ideas and it would be nice and easy to recap on other omleteeers budget faves. I had a look at Jamies meals for a fiver this week before I went shopping. I thought it would be good if we could add our own to an omlet sticky.

well, we got about 15kg of carrots and about 10 kg of spuds today for £3 by stopping at a small farm/smallholding that was selling them. The cheapest equivalent in Asda would cost about £15.

 

My tip would be not to use supermarkets if at all possible and keep your eyes open for small local producers.

Ok, Ill start us off. Went to Tesco :evil: yesterday as I do to cruise the special offers. They are selling 4 cans of tuna in brine for half price. Tonight we are having baked potatoes with a mix of tuna, a tin of sweetcorn, mayonnaise and a bit of finley chopped onion with some home grown salad leaves. I recon this will cost about £2.50 - £3.00 max and will feed all 5 of us.

 

Also yesterday I bought some vegi burgers (the breadcrumbed variety) for £1.50 a pack in Tesco :evil: Great with salad too for a quick speedy tea.

 

Muller vitality yogs are 2 6 packs for £3.00 this week too.

 

We are having scrambled eggs one night this week with ready cooked smoked mackerel fillets which cost £2.80 from Aldi. Amazingly my kids actually like this. Eggs for free!! (well apart from the food, treats etc :wink: )

I am a student therefore the queen of budget meals and I make a very nice spicy bean goulash with chorizo - prob costs £5 max and does me about 6 meals:

 

1 chorizo

1 red onion

3 cloves garlic

1 jar passatta

2 red peppers

1 courgette

1 aubergine

1 tin kidney beans

1 tin cannellini beans

1/2 glass red wine

mild chilli powder

paprika

black pepper

small amount of sugar

 

I think thats about it - just chuck it all in and scook for 30 mins or so and serve with rice and yoghurt - is very nice and cheap and filling as well as healthy!

We had moroccan meatballs last night - cheap and easy! Bung some mince and chopped onion in a bowl, add a teaspoon (or as much or as little as you like to taste) of cumin, paprika, chilli powder, add some chopped coriander too and mix together and make the meatballs.

 

DH then fried some onions in the tagine on the hob (or use a casserole dish in the oven), added garlic and chopped tomatoes, add the meatballs and cook for about 20 mins. He then broke a couple of eggs over the mix, covered and cooked for a further 10 mins. Serve with rice or taglietelle and et voila!

Savory rice makes meat go farther- chop up meat very finely and fry with uncooked rice in a wok or paella pan, add any cheap veg you can get all cubed, add some 'Spicy season-all' from Schwartz and half meat half veg stock to cover. Bring to boil, put on lid, turn off heat and leave for 20 mins. Come back to perfect rice. I find I can get away with half rations of meat this way.

Mmmm yummy Rhapsody, that sounds just the ticket for supper tonight, Mum & Dad are coming round to babysit, so need feeding & I only have a packet of 4 chicken thighs in the fridge. Got a selection of veggies & a pack of rice, so almost there already!

P.S. Yes it was yummy - even DS ate most of his, although I think the over-abundance of butternut squash in his bowl did for him in the end!! Next time DH has a bottle of wine open, I'll add a slosh of that too.
