..lay a little egg for me Posted October 26, 2008 Share Posted October 26, 2008 Did you see HFW's programme on Friday? He was being persuaded as to the niceness of cauliflowers. His chef presented him with cauliflower cheese (he didn't like it) and then cheese cauliflower (he loved it!)...cheese cauliflower is deep fried cheese with a cauliflower sauce...hmmm...not so sure myself. I'm not that keen on cauliflower cheese, but I do like it if as well as the cauliflower I put in lots of other veggies, such as broccoli, carrots, courgettes, onion, tomatoes and potatoes/pasta, with the cheese sauce and then bake in the oven with extra cheese sprinkled on top. Just the thing on a cold winter's day. PS the veg need lightly cooking before going in the oven. I usually put the potatoes on first and then add the other veggies in the order of which takes the longest cooking so they are all ready at the same time and you only need the one (big!) pan. Guest Posted October 26, 2008 Share Posted October 26, 2008 These days I steam the cauliflower for cauliflower cheese, rather than boil it. Then cover it with a lovely cheesy thick sauce and bake it. I par-boil cauliflower and brocolli, make a white sauce (imprecisely using a big fat dollop of butter, melted that I then add flour to it and mix for a couple of mins before adding milk and whisking to get the lumps out, then add grated cheese). I bung the veg in a ceramic baking dish, add bacon or whatever I have in, stir a little bit of mustard into the white sauce, pour it over the veg with some more cheese as a topping and then put it in the oven for about 20 mins. Milly Posted October 26, 2008 Share Posted October 26, 2008 Delia has a good recipe for cauliflower and broccoli soup - I have made it with cauliflower on its own. Fry an onion, add the cauli broken into bits and sweat with lid on for about ten minutes at a low temp. Then add 570 mls veg stock, 275 mls milk, bay leaf and 2 tbs parmesan. Cook for 15-20 mins until the cauli is soft, remove bay leaf (it looks a bit stringy at this point, but persevere) then blend and serve with a touch of nutmeg. It's very simple but tasty. Luvverly I always crisply fry some chopped bacon and add it to the cauliflower cheese and I put loads of English mustard in the white sauce, one of my favourite warming meals Cauliflower is also very nice if you break it into florets, cover it in tomato puree, wrap in silver foil and bake in the oven, very yum. AMS Posted October 29, 2008 Share Posted October 29, 2008 Cook cauliflower and pasta together. Meanwhile slice and fry an onion. Drain cauliflower/pasta reserving some of the water. Mix caulifower, pasta, fried onion, water (50 mL-ish I think), a large handful of grated parmesan cheese and lots of black pepper together. Yum!
