Cheese and Leek pudding

Here is a nice supper recipe.

 

Cheese and Leek Pudding

 

Ingredients:

2 leeks very finely sliced

K"Ooops, word censored!" of butter

4 eggs

300g Creme Fraiche (full fat, none of your weedy stuff)

4oz grated strong cheddar.

 

Method:

 

Saute leeks in butter till transparent but don't allow to brown .

 

Beat eggs lightly till combined.

 

Stir in creme Fraiche till mixture smooth.

 

Stir in cheese till distributed throughout mixture.

 

Season well.

 

Line base of dish with cooked leeks

 

Top with cheesy eggy mixture.

 

Cook n preheated oven gas mark 5 for about half an hour till nicely browned and firm in when gently pressed in centre.
