Central Heating Soup

This is what we use in the Medieval Hovel in lieu of a modern heating system :lol: It's an adapted West Indian recipe, and if you're on WW it is 0 points!!!!!!!

 

HOT PEPPER SOUP

 

2 bags mixed value peppers from supermarket or about 8 mixed loose

4 fresh red chillis

Sea salt

Black pepper

Ginger, grated

Garlic, crushed

A little oil

2 pints veg stock

 

Remove centres, seeds and pith from peppers and chillis but leave whole. Place in roasting dish with oil, pepper and salt. Roast on a low to moderate heat for about 40 mins, until soft and starting to blacken. Allow to cool.

Make up stock and put in large pot, add roasted peppers and chillis and blend (I use a hand blender in the soup pot, if you are using a goblet blender obviously you need to do it slightly differently)

Place on medium heat, add rest of ingredients, bring to a simmer and taste. Adjust seasoning (add more heat with some dried chilli if you need to :wink: )
