Microwave Steamed Sponges Makes 4 2 oz soft butter 2oz castor sugar 2oz SR flour 1 egg Jam, marmalade or syrup. Lightly butter 4 ramekin dishes Put a spoonful of jam/marmalade/syrup in the bottom of each dish. Beat butter and sugar until lighter in colour and fluffy. Add the egg and beat well. Stir in the sifted flour and mix well. Add a drop of milk if the mixture is too stiff. Divide the mix into the 4 dishes. Cover tightly with clingfilm. Pierce each one just once. Cook, 2 at a time, in the microwave on High for a minute and a half. They will still be pale and look slightly undercooked. Leave - still covered with film - for 5 minutes or more. I made mine in slightly larger than normal ramekins and made 1/4 pint of custard - there was just enough space to add 1tbsp of custard! Normal size ramekins will be full to the top. I had some marmalade that needed using up - I really wanted to use syrup I'm sure the calories/WW and SW points etc. must be reasonable for one of these - as an occasional treat. laurmurf Posted January 27, 2009 Share Posted January 27, 2009 OH just tried making these but we're not convinced he's done it right - they took longer than 1.5 mins in the microwave (they were still 'raw' by then). He put them in for another 30 seconds then took them out....but we're still not sure they're right. Not very 'sponge' like! We have a high power microwave, used standard size ramekins and although we trebled the recipe ( ) we only cooked 4 at once. any ideas what might have gone wrong? They've probably had about 6 or 7 minutes of 'waving with lots of time between. Considering OH started making them about 7.30, I'm about to give one a 'go', but they still look very 'cake mix-y' around the edges He's decided that this is a trick played on new members of the omlet community (a sort of hazing, if you like) and the fact that I've fallen for it and not been warned means that I am not accepted as a full member yet..... I did forget that I cook them two at a time! - I've amended the original recipe. A drop of milk will loosen the sponge and make it rise more easily, Poet ,so probably a good idea. Made these last night, had half a jar of root ginger in syrup that needed using up, so used that instead of jam etc - kids thought it was fab. Microwaved Steamed Sponges was the answer...DS loved them. We had them with golden syrup and cream not custard..surprising how much cream they can soak up! Better make custard next time I think!
