I bought the ingredients over the week,so it didn't really register that it has Oil & a whole block of coconut cream & a whole tub of full fat Philly in it However,it does come with a nice fresh raspberry sauce,so at least I will get one of my 5 a day Quote Link to comment Share on other sites More sharing options...

Cinnamon Posted May 12, 2009 Author Share Posted May 12, 2009 Here you go - I take no responsibility for jeans that no longer do up! COCONUT CAKE Melt 200g block creamed coconut in a small pan. When melted add 3TBSP of Rapeseed or Groundnut oil, mix well & leave to cool. When cool add 200g full fat cream cheese (I used Philly) & 600g sugar, & beat until light & fluffy. Add 5 large eggs one by one,beating well after each one, plus 2 TSP vanilla essence & a pinch of salt.The mix will have a mousse like texture. Fold in 375g Plain flour then 175g Dessicated coconut. S"Ooops, word censored!"e into a 20x30cm deep tin which has been lined with baking parchment. & cook for 1 hour,until a skewer comes out cleanly. Turn out to cool on a rack RAPSBERRY LIME DRIZZLE Whizz 250g raspberries in a food processor with 3 TBSP brown sugar,then push through a sieve.
