Cinnamon
Here is our family recipe. You can add other fruit - stewed apple in a layer in very good. Place 500g day old bread torn up into a big bowl. Pour on 285ml semi skim milk & leave to stand for at least 1 hour, preferably overnight. Preheat oven to 150c & grease & line the base of a a 20cm deep square tin. Add 75g raisins,75g Currants, zest of 1 lemon,125g Demerara sugar,2tsp mixed spice, another 285ml semi skim milk & 2 beaten eggs & mix well with your hands (lovely fun squishy bit!) Pour mix into the baking tin & cook for 1.5 hours until golden & springy. Remove from oven ,leave to cool & sprinkle 25g demerara sugar on top. Cut into squares to serve. Plum
Thanks that sounds really yummy. I like the mixing with the hand bit. Now I shall make both (not at the same time) and let you what my OH says.
Space Chick
Just wanted to say Cinnamon, that I tried your recipe yesterday. I was a little concerned that as it was a granary french stick that I had (which I'd made on Friday), that it wouldn't work. However, it worked a treat and tasted delicious. Thankyou very very much! Cinnamon
You are most welcome. We have an old bread glut this weekend,so will probably make one too - the girls love it in their lunchboxes & ask for extras for their mates
