Jen&Rog Posted June 12, 2009 Share Posted June 12, 2009 I've soaked a whole packet of butter beans and I'm boiling them up as we speak (can you tell I'm running out of things to do in my maternity leave before baby arrives?!). So what on earth can I create for tonight's tea? If all else fails I'll cook 'em up in a spicy tomato/curry sauce, but if anyone has any fab ideas please feel free to share! I wack the tins of toms, butter beans, onions, sprinkle of herbs andsausages in the slow cooker and leave it on but you could just do it in a casserole dish in the oven. x Quote Link to comment Share on other sites More sharing options...

For a treat I love them with bacon and pour the bacon fat over the beans (it has to be real bacon though, not the sort that leaves a white residue in the pan). On a similar theme, I bought a ham hock from our local farm shop for £1.99 a week or so ago and slow cooked it with cooked butter beans and the juice from the hock gave the beans a wonderful, not too salty taste. Butter beans on their own are a little bland so they need quiet a bit of seasoning after they have been cooked. jackiepoppies Posted June 12, 2009 Share Posted June 12, 2009 Our favourite is...... Butter beans i(cooked) in a pan, tin of sweetcorn, white wine, cream, salt and pepper to taste. Finish off by adding some finely chopped spring onions. Just warm through until the sauce thickens. Space Chick Posted June 12, 2009 Share Posted June 12, 2009 You could use any left overs and mash them and use as you would use mashed potatoes: Cottage Pit, Fish Pie, Pasties, Rissoles, Fish Cakes. Tinned beans, pulped using a hand blender and adding water to give a thick pouring consistency. Add grated cheese, mustard, salt and pepper.
