Mrs Frugal Posted November 2, 2006 Share Posted November 2, 2006 Low Fat Mint Chocolate Mousse 2 tbsp cocoa 350ml skimmed milk 2 medium free-range eggs – separated 70g caster sugar ¼ tsp peppermint extract 12g gelatine (or 4 gelatine leaves) 25g plain chocolate shavings to decorate 1. Mix together the cocoa and milk in a saucepan and heat to boiling point then cool for 5 minutes. 2. While that is cooling, beat the egg yolks with the sugar using an electric whisk, until thickened and creamy. Stir in the peppermint extract. 3. Gradually pour the chocolate milk onto the egg mixture, stirring constantly to combine. 4. Soak the gelatine leaves in a roasting pan full of cold water until soft or dissolve the powdered gelatine in 3tbsp hot water to dissolve – use a bain marie if necessary. 5. Return the mixture to the pan and stir over a low heat for about 5 minutes until thickened a little. 6. Add the gelatine to the milk mixture and stir to combine thoroughly then place the pan in a sink filled with cold water to cool the contents down a bit. 7. Meanwhile, whisk the egg whites until they form soft peaks then fold into the milk mixture. Divide between moulds and chill in the fridge. 8. When set, dip the moulds in hot water for a few seconds then run a knife round the edge of the mousse to help release it from the mould and turn it out onto a plate and serve with chocolate shavings on top and a nice puddle of pouring cream if you’re feeling a bit naughty! Do you think it will still work?? I go to Morrisons every now and then to stock up on Rosemary Conelleys Chocolate Mousse as its the only vegy one i can find! Trish Posted November 3, 2006 Share Posted November 3, 2006 To busy looking in the cupboards for the ingredients to reply Mel. Sounds yum Kate Heres a very quick Chocolate pudding that is low fat. It's no mousse but great still. Serves 4 3tbsp cornflour 3tbsp brown sugar 2tbap unsweetened cocoa powder 2 cups skimmed milk 1tsp Vanilla extract Mix the cornflour sugar and cocoa in a pan, add the m,ilk and stir till smoot. Cook on a medium heat till it comes to a boil. Lower to a simmer and stir constantly for 3 or 4 mins. Stir in the vanilla and pour into serving bowls. Eat warm or leave to set and eat cold. It's basically a very thick chocolate sauce but hey it's choccie. TRy it with Green and Blacks cocoa MMmmmmmmmm Quote Link to comment Share on other sites More sharing options...
