Couperwife
Help!!! we are drowning in a glut of onions ok, so we have this allotment, and just before chirstmas the local "home an garden barn" has lots of onion sets, so I bought about 5 bags - well, I didnt know that they would ALL grow did I?? now, I have given hundreds (or so it seems) away, and we still have at least a million left (cant give any more away - people run when they see me coming ) does anyone have any super recipes that use tons of onions - something that would last, maybe frozen, or pickled, or something like this. eagerly awaiting recipes to try cathy x
BeckyBoo
pickled onions are fab - home made ones blow your head off but they need at least 6 months in the pickle jar. Nearly all chutneys use onions, small ones are fab whole in picallili (sp?) and I LOVE onion marmalade. Failing that they will keep if you keep them dry and dark. Wish I was nearer, mine all flunked - never been good at growing onions! BeckyBoo
Cinnamon
I love Onion Marmalade too, but have never though of makeing it myself. Anyone got a recipe, as I will be into my Onion glut soon too, & I could keep it for my Christmas hampers
Snowy
I would use them as the basis for a tomato/pasta sauce - cook with tomatoes, courgettes and garlic and freeze in batches to be used as the basis for pasta sauces, soups and casseroles through the winter

Falkor
If you have the feezer space then I would just slice and freeze.......ready chopped onion. When i worked in a cafe on yarmouth pier it was my job to cut up the 25kg sacks of onions that got delivered.....good job i was too young to wear mascara!!! chickencam
Even autumn planted onions will keep pretty well just well dried in the hot sun then strung up, they should keep until Christmas I would think. Spring planted ones kept in the right conditions and thoroughly dried will keep for about 10 months.
