Lesley
I think Kate has posted Delia's recip somewhere before? Check www.deliaonline.com for her cooked mincemeat - it keeps really well. Here it is http://www.deliaonline.com/recipes/home-made-christmas-mincemeat,1235,RC.html

Guest
I've got hers and that is the one I'm planning to make - no suet I was just interested to see the other recipes too! Perhaps I'll make 3 different sorts?
Laura007
1lb 2 oz of currant, sultanas and raisins. 1lb 2oz of grated bramley apples 500g shredded suet. zest of 1 large lemon + juice 12oz demerera sugar 4oz muscavado sugar 4 floz rum 4 floz amaretto 6 floz brandy (the alcahol can be any combo of the 3 or the same volume of just two of them, as long as it comes to 14 floz it doesnt matter as long as you like it.) chuck it all in a bowl and mix it uptill its all combined. cover it up and leave for 24 hours. get the family involved by getting them to stir it up every time they pass by. put it into jam jars. tahdah
Mrs Frugal
I've made Delia's mincemeat today and it smells fantastic! We've all had the obligatory stir as we made a wish! Wonder if they'll come true . It's all ready for the slow cook to melt the suet tomorrow then I'll bottle it and let it mature in time for Christmas.
