Blackrocksrock
We dont seem to have eaten much fruit this week and the nectarines, pears and a couple of apples were getting iffy along with the bananas - the bananas went in the freezer for cakes and I stewed the fruit. I then made bread and butter pudding and put the stewed fruit between the layers and it is really yummy with mascerpone cheese - OK OK I know I posted on the need to lose weight forum but I had to eat some things up first
Saronne
Sounds delicious! I love adapted recipes. That's what good home cooking is all about. Saronne x

Barkisland
Sounds delish! I love B&B pudding in all its guises, I'm going to make one this weekend with my failed gooseberry jam I did, and Oh my! it's lovely Made it for tea last night... And I had some more for brekkie this morning, (figuring it's only bread butter and jam really, so no worse for me than toast!) I reheated it this evening and it's better still. Great pud for little money

Happy chickens!
Love b & b pudding, but can't convince the rest of the family, even when I make my grown up version - add zest of orange to the layers, sultanas and a splash of cointreau. Mmm, but perhaps best not have that one for breakfast.
Old Speckled Hen
I make my B&B pudding with Panettone (home made sometimes but shop bought is fine) Slice and butter, put in a dish, mix cream and eggs with sugar and lemon zest, pour on top and bake for 20mins. Wonderful. You can throw any fruit in but blueberries do particularly well.
henny penny
My family don't like bread and butter pudding as they say its too eggy! could you mke it with less egg?
Old Speckled Hen
Well you can use a few-egg custard. That's where I think the panettone excels. It's sweet already and needs little custard, just enough to moisten it. Though you can go the whole hog and make the custard with double cream extra yolks and real vanilla. We should take his example.
