Hugh's crispy pancakes

did anyone watch ricver cottage winter yesterday? They showed Hugh making crispy pancakes (like the findus ones but more tasty looking!).

 

I think the recipe is in the next programme but i want to make them now! I've got some savoury mince in the freezer and I've just been given some day old bread by next-door-but-one who gets it off the baker for his horses.

 

He's given some to us for the chickens but I'm going to use it for breadcrumbs instead so all i need to do is make some pancakes but i don't know how he puts it all together.

 

help! :D

I was going to make some pancakes then brush one side with beaten egg, cover it in breadcrumbs then put some filling in and fold it over and seal with more beaten egg and do them in the oven, but my kitchen scales have gone caput. I tried to make pancakes by guessing but they turned out rubbish, too heavy and broke apart so i just ate them with lemon and sugar instead :roll:

We had these on Monday for dinner. DS had a friend over so I thought why not. It was a real retro looking plate what with (non)Findus crispy pancakes, baked beans and mash. I didn't have any smoked fish, so made up a batch of the cheese sauce with some sweetcorn, divided into two bowls, mixed chopped ham in one and tuna in the other. Was very, very nice. Everyone prefered the tuna one. I shall be doing these again. Maybe do a double batch and freeze half as it did take me a while to make (pancakes always seem to take forever).

We had these this week too :D or that should really be everyone but me and a few friends of the children had them!

 

I doubled the quantities and did the chicken one, the first 2 were huge as my pancake pan bought from Aldi for the occasion is too big :roll::lol: but I still used it, cut the pancakes in half and made them in a quarter segment shape which went down really well :D

 

A few oven chips and baked beans and lots of clean plates :D

 

The only down side was the big faff factor though making enough for 7 :?
