I've made some this morning, supposed to be for presents but, once it was potted up I confess to eating the mixing bowl s"Ooops, word censored!"ings and it just tasts SO divine. Now I am loathe to give the rest away. I used delias recipe, although I do mine in a double boiler, rather than straight into a saucepan as per her instructions;I've had too many batches catch in a saucepan. I've made a couple of different types of jam too. But, I am still looking for inspiration for a couple of other, easy/fast things to make. Anyone got any idea? I'm going to assume you mean to try and make it Seriously it is VERY simple but the taste is out of this world. Take a look at Delias recipe, and if you follow that, but, use a double boiler (or a bowl over a saucepan of boiling water) it won't catch on the bottom. It takes longer for it to thicken but its SO worth it. Trust me, if I can make it and get it consistantly right it has to be easy. Go on... It says it only lasts 2 weeks in the fridge though... does the lemon last longer as I have lots of lemons at home and would like to try and make some to give out as presents too!!
