My children are developing an unhealthy taste for KFC so a good homemade version would be a good compromise for their occasional junk food fix. Its wonderful with home made coleslaw & chips I found it a bit salty for my tastes though,so I don't add the extra teaspoon of salt,finding that the onion salt & garlic salt do the job fine on their own. Chucky Mama Posted March 13, 2011 Author Share Posted March 13, 2011 Well, children have just been fed and it was a success, thanks for your help I made a slight change to the recipe. I coated the chicken in natural yoghurt first and used one of those oil sprays to first spray the baking tin and then the chicken pieces. I then baked it instead of frying. It was very authentic. I tweak the recipe occasionally according to what's in the cupboard, and always bake it rather than frying, but the main thing is that the chicken we use is always freerange.
