He makes loads of jam including strawberry, but the last batch he used lemon juice in it & it didn't set well. He DOESN'T WANT TO USE PECTIN!!!!!!!!! Mrs Blue Sky Posted June 16, 2007 Share Posted June 16, 2007 What's he got against pectin? The only suggestion I can come up with is to use some apple, as that is very high in pectin. He couldn't use too much as it would affect flavour and colour, but he might use just a bit of apple and get a soft set preserve, along french lines... Charlottechicken Posted June 17, 2007 Share Posted June 17, 2007 According to the WI you can make your own virtually tasteless pectin stock by cooking the peel, core and pips from apples. Just cover with water and cook gently for 45 mins to 1 hour. Pour into a jelly bag and allow to drip through. you can freeze this to add to jam as you wish. As an aside, the WI recipe for strawberry jam has just 3lb strawberries, 3lb of sugar and 2 tablespoons of lemon juice. Quote Link to comment Share on other sites More sharing options...
