Good way to use eggs

I was going to suggest scotch eggs too, have made them for the first time today and have gone down a treat. Used 6 eggs to make 4. Will double up next time as they didn't last long! Recipe off the pink whisk website, worth taking a look at site for lots of other yummy recipies that include eggs.

OH made me a chocolate cake out of the first Great British Bake Off book for my birthday, it was made with just 6 eggs, sugar and butter, no flour or ground almonds or anything solid. It rises up the sinks in the middle when cooled. He didn't put the rich chocolate icing on it just some whipping cream and sliced strawberries. :drool: it was tasty but not sickly :D

Been meaning to say for ages about the Easter Bake Off special.

Mary Berry made the most delicious meringue, and then with the yolks made scrummy looking lemon curd to go with it.

It was basically a huge meringue nest, filled with cream, the lemon curd and some mini eggs.

It did look very tasty and would use some eggs - just not very healthy :lol:

There's a recipe on here somewhere for a Lemon Meringue Roulade which uses a few eggs....and is very yummy!
