chickencam Posted February 17, 2013 Share Posted February 17, 2013 We are lucky to have plenty of eggs at the moment, I think 6 out of 8 of my girls are laying most days, we had 37 eggs in the kitchen this morning despite using 6 yesterday We decided that we had to find a pudding today that used plenty of eggs. I hate to use just yolks or just whites. OH went to his Pudding Club book and found an apricot Queen of Puddings which used 4 yolks in the base and 4 whites in the topping, it was easy to make and yummy, we used peaches because we didn't have any apricots. Will definitely be making this again. Still have a kitchen full of eggs though, so must get creative with this week's meals, any ideas would be gratefully received We are having Kedgeree tomorrow. bluekarin Posted February 17, 2013 Share Posted February 17, 2013 I shall see through my egg envy and suggest lemon meringue pie as it would use yolks in the curd and whites on top, or custard, kedgeree would be great too. I also love Spicy Tomato Baked Eggs which is a quick and easy supper dish. If I had that many eggs, I'd probably pickle some, just because I really love pickled eggs (and anything else pickled for that matter ). Daphne Posted February 18, 2013 Share Posted February 18, 2013 The sun has been out for a few days so I am the proud owner of 4 eggs, I really can't imagine what its like to have a glut in February Frittata uses up loads of eggs plus leftovers so double win We use about 6 large bantam eggs for 2 people - sometimes this leaves a bit to go in a lunch box for the next day. I put my egg glut down to young hens 2 of whom have laid all winter one older lady who also laid for most of the winter and my girls coming back into lay early. I think that feeding them on Garvo pellets has made a big difference to their vitality, they all went through their moult quickly and have the best plumage that I have seen on my hens. I put onions, potatoes, chorizo (or ham etc. whatever needs using up) some chopped herbs and the eggs, then cheese ontop before grilling the top so it's pretty filling! Daphne Posted February 18, 2013 Share Posted February 18, 2013 My frittata is very similar to Kinsk's. I tend to slow fry an onion so its sweet, but if I'm in a hurry I will quick fry it so its brown and tasty, with some raw potato chopped very small so it cooks through, or cooked spud if there is some lurking, or no spud if I'm in a hurry, plus some sliced pepper. Whilst this is doing, chop up a garlic and slice some chorizo or use ham and maybe a bit of pimenton, or even leftover cooked sausage (I don't like bacon with egg, that's just a personal thing, but if I was using I'd add it at the start). Add these to to pan, fry about a bit whilst you whisk up the eggs. Add the eggs, cook through as much as you can and then finish off under the grill with some cheese if you are feeling hungry or piggy Quote Link to comment Share on other sites More sharing options...

I have just made some eggy bread, for my lunch, very yummy, I had the savoury version with just a little salt and pepper beaten into the egg, then fried in olive oil. We miss our girls and their eggs very much; OH buys eggs from someone in his office who has a large flock of girls and they are lovely but not the same as ours were and he is not always in the office so sometimes we have to 'WHISPERS SECRETIVLEY' buy eggs! chickencam Posted February 25, 2013 Author Share Posted February 25, 2013 so far in todays egg challenge, the children had a poached egg each for breakfast, I had one for lunch, and I have made an orange custard cake, and one of my boiled fruit cakes and I am going to make an egg custard later when i have been out for some cream. 9 down and 4 more to go. I tried to send ED back to uni after a weekend at home with half a dozen but she simply didn't have the space and it could have been quite messy. I will send her some cake instead. Lemon curd is the obvious choice but I have made curds with other fruit including gooseberries in the past. Even better if you make a Victoria sandwich cake and put curd in the middle instead of jam. chickencam Posted March 6, 2013 Author Share Posted March 6, 2013 Yesterday I managed to use 14 eggs made a cherry loaf cake, and an orange marmalade cake from the Bake Off book, then had egg curry Madhur Jaffrey for tea. I did this recipe http://www.guardian.co.uk/lifeandstyle/wordofmouth/2012/may/31/how-to-cook-the-perfect-scotch-egg but doubled it as there are 5 of us and DS usually eats two of them.
