Mrs Webmuppet
The lovely people who own the garden where my bees live keep giving me mountains of cooking apples (they have a huge tree in the garden). Now I have frozen loads to use in the winter. I have a pan of mincemeat on the go and plans to make blackberry and apple jam, cinnamon apple compote and fig and apple jam. I have already made a mountain of chutney.......does anyone have any other apple based preserve recipe? There will loads of apple based preserves in the Christmas hampers this year I will also be making a huge apple pie for pudding......Mr W is getting fed up with apples though! Lavenders_Blue
If you drink alcohol, I recommend doing what my friend did the other year and making apple gin. It's basically sloe gin but with apples instead, so a bottle of gin, a load of chopped up apples and some sugar all thrown together in a kilner jar and left to steep (no idea what quantities she used, but I reckon it was probably fairly unscientific!). I actually used some of the boozy apples to make an apple cake last weekend at it was LUSH!
Mrs Webmuppet
Sadly the alcohol recipe isn't any good to us as we don't drink alcohol........
sjp
cooking apples will store some quite a while just wrap the best ones in a sheet of newspaper and put them in a card board box or fruit tray that the supermarkets get the fruit in then store them in a cool dark frost free garage or room not on the concrete floor the use as required they'll go a bit soft but they'll do for pies or crumble or stewed apple you could a able to keep them through to April but more likely Feb or early march depending on the variety and as most cookers need at least 4 weeks after picking to develop their flavour they can only improve
Olly
I was going to suggest chutney or mincemeat, but you've covered those! How about apple butter? I haven't tried it but it looks a bit like lemon curd - there are some slow cooker recipes too, if you Google it.

I actually used some of the boozy apples to make an apple cake last weekend at it was LUSH! My hubby has just made apple gin, apple brandy and apple whiskey with orange and coriander. Looks like we will be having an apple based Christmas this year. Mmmm just thinking of boozy apples maybe they will get used in my mincemeat this year. Lavenders_Blue
What a fabulous idea! I think they would be perfect in mincemeat
jasperaliceuk
Mint jelly is a good one! Its really good homemade. And chilli jelly jam too. Just back from holiday and have been picking up all the windfalls after the stormy weather. Just got a batch of chutney on the go. Strudel tomorrow. And maybe some mint jelly after that. My problem is getting it all eaten. I keep throwing jars away that are at least two year's old. I give some away, put some in fairs, and still seem to have stuff left. Mrs Webmuppet
I try to work out what we need of all the stuff I make and the rest goes into hampers for pressies.
Luvachicken
We make apple upside down cake - exactly the same quantities as a pineapple one but with apples. I tend to use 2 apples sliced up. I know it won't use up many of your apples but it does taste yummy ( especially with cream ) Or how about good old fashioned baked apples..... Or apple fritters...........I could help you eat them Dorset apple cake ? I'm feeling very hungry now .........
Mrs Webmuppet
I finally used up the apple mountain ....I made loads of apple, raisin and cinnamon compote, some apple sauce and a huge apple pie (the pastry was balanced tent like on top). Then Mr W went to make sure the bee hive was ok today and came home with two carrier bags full of apples oh well guess what I will be doing tomorrow!
