Made some crab apple jelly at the weekend. Boiled up the apples for 45 mins, strained overnight, added 500g to each 500g of juice, boiled up again ( pan boiled over, cleaned up sticky swamp ) pan back on heat, let it reach 'jam' temp on my thermometer, poured into jars and once cooled it hasn't set properly.

 

If I put it back in a pan and boiled for a bit longer could it be saved?

Sometimes the thermometers can get underenthusiastic with atmospheric conditions. Just found this:

What a coincidence! Good luck! Maybe the apples were lacking in something because of the weird winter weather and a dryer summer?

There's a lot of pectin in crabbies, so it should have set easily. Adding a little lemon juice will make it set and won't affect the taste.

I had the same last year.

 

I thought the same about the pectin was was quite surprised it didn't set. Am reboiling it as we speak so fingers crossed. I'd forgotten about lemon juice, I have a feeling last time I made it I put some in as it was a bit too sweet.
