I've used the plain flour and the self raising flour - also have the wholemeal self raising flour but not used it yet. You need to get xanthan gum to keep it together. I've made really nice pastry with the plain flour years ago for my dad - I'm using it again for me now (whether it's necessary or not until tests are done, gluten free doesn't play havoc with my tum).
