Easy Lunch?

Soon I will be walking around some forest for a day, and I can't think of what to take for lunch. And it has to be cold, eaisly prepared, has no meat, and has to be made in a tortilla wrap or similar. Any ideas?

Errr - Tuna Mayo and sweetcorn with green salad. Or cheese tomato and mayo. Some kind of pasta salad with tortillas on the side :?: . Cheese and pickle - :arrow: - hmmmm, sorry a bit rubbish at this.

 

Easily prepared - go to M and S and select what you fancy :oops::lol:

It does sound from your post that you will need to prepare it beforehand and take it with you?...........so, all good ideas....

 

I would add that if it has to be a filling for a wrap then choose a softer type cheese - I find wraps dry and difficult to eat unless the filling is sloppy.

I will be watching this thread with interest because we are always looking for fillings for wraps.

 

We usually stir fry some chicken or turkey with five spice seasoning then pile into a wrap spread with mayo with sliced peppers onion and loads of lettuce.

home made egg mayonnaise with cress?

 

Cheese and coleslaw?

 

tomato, basil and cheese?

 

Salad, garlic dip and salsa?

 

roasted vegetables (courgettes, peppers, mushrooms etc) pre cooked and then mixed with some nice cheese and salsa/dip.

 

flavoured rice with roasted vegetables/or coronation style/curried rice.

 

All these you could pre prepare the fillings, put them in a container and take them with you. :P

What comes to my mind, Fred, is a potato "tortilla". Just off the top of my head, I would saute some sliced potatoes in olive oil in a frying pan. When they are quite crispy, I would pour in an onion and raw egg mixture along with any herbs you might fancy (oregano?), cook thoroughly and cut into quarters and fry on the other side.

 

No mayo which could go dodgy. You could also add some shredded cheddar or red leicester cheese with the onion and egg mixture.

Houmous and grated carrot.

You do make it sound like a challenge? You could make your own hummous using tinned chick peas if you need to, bit difficult to get the right texture without a blender in the forest though.

 

Cream cheese and prawns, season with plenty of black pepper. (if the prawns start off frozen in the morning they should keep fine without an ice pack - just make sure they have sufficient time to defrost) How many people have you got to prepare this for? More than just you?

 

Tofu, grated carrot and cumin seeds

 

A thin layer of Marmite and some chopped salad
