Cate in NZ
I love lemons and particularly love the fact that they grow readily over here . Unfortunately I have been unwise enough to tell just about everyone that I've met about my fondness for them. So, on friday I bought 3 lemons from the local supermarket, then Immi returned home from her after school run round the local woods, with a bag full of lemons that she'd collected (apparently someone has a tree that overhangs from their garden onto a footpath in the woods, so she collected windfall lemons), then hubby came home after working late with a bag of lemons that one of his work colleagues had brought in for him. yesterday a neighbour popped round to introduce himself and just generally be friendly, and he brought a small gift......yes, you've guessed it. At one point I had 46 lemons I've made lemon cordial, lemon meringue pie and lemon curd, and we had pancakes with sugar and lemon slices for breakfast this morning, and a moroccan style chick pea casserole with lemon wedges for dinner this evening. What else can I make I'm thinking of a lemon marmalade, does anyone have any recommended recipes as I've never made marmalade before. Otherwise I'll check out the Waitrose site as I've generally found their recipes to be pretty good. Or has anyone got any other ideas for lemon based recipes please? Couperwife
awwww, arent they a kind lot it sounds like you need to give some kindness back to the people who gave you the lemons (or your new neighbours) and donate the jam and stuff - or you iwll be eating it for years we arent adventurous with lemons, we just freeze them and put them in drinks, enjoy cathy x
lizinsa
Claret's famous lemon drizzle cake? I make it with the weighing egg method and it never fails me. You learn something new everyday on this forum, I never knew you could freeze lemons, can you do that with other citrus fruits too?
Egluntyne
Lemon curd? Best way to eat it? Straight from the jar with a spoon. Have you sourced some hens yet Kate?
Lesley
Windfall lemons! - how wonderful! I have a Lemon Jam recipe - easier than marmalade..........I'll post it for you........
Couperwife
we freeze lemons, limes and oranges it means that you can keep a nice gin and tonic (or something non-alcoholic) nice and cool and not dilute it just slice up (however you slice your lemons normally) and stick into a freezer bag, make sure that you dont layer them together or they will stick bung in the freezer enjoy cathy x
chickencam
What a good idea, I am partial to a nice slice of lemon or lime in my G&T and I like it ice cold. Off to get slicing
