A good, cheap standby.....and my favourite comfort food. I can make this in 10 mins if I'm really desperate Potatoes, peeled and cut into small pieces (really small if in a hurry!) Butter Cheese Onion Baked Beans While the potatoes are boiling, grate the cheese, very finely chop a small piece of onion and put some baked beans in the bottom of an ovenproof dish. Warm the beans in the microwave - or warm them first in a saucepan. Mash the potatoes with some of the butter and the onion. Add cheese to taste. Top with grated cheese and put under the grill until bubbly and golden brown. Sometimes I make it with tomatoes instead of beans. Quote Link to comment Share on other sites More sharing options...

Cinnamon Posted October 17, 2008 Share Posted October 17, 2008 Oooooooo - I do smoething similar,but I havent made it for ages, so thanks for the reminder I fry onion, add it to buttery mash with heaps of cheese, pit it in an oven dish,top with thinly sliced tomatoes & more cheese (you can never have too much cheese!) & bake until all golden & bubbly. You can omit the cheese, add more onion & corned beef for a corned beef hash type thing too - a very cheap yummy meal. Glorious comfort food but as LSH doesn't like onions ( ), we've not had this for years ! We do have the corned beef hash recipe my Grandma used to make though - a layer of corned beef, a layer of baked beans, topped with mashed potato and grated cheese. Mmmmmmmmmmmm!! chickencam Posted October 17, 2008 Share Posted October 17, 2008 This was the first thing my DS made in food tech last year yr7, but he ended up making it at home because he was off school with a rotten cold. His version had mustard powder in the mash, no onion and no beans. It was nice but would have been even nicer with onions which he loves and would have done his cold good and some beans. We make corned beef and onion with mash on top in the winter my MIL's recipe it is really yummy and a store cupboard meal, it would be nice with baked beans in too must try that I feel for you Kate my OH loves onions as we all do a life without onions nooooo My DS will eat them raw and eats pickled ones whole, a favourite after school snack, he'll have to find a girlfriend who likes them too Quote Link to comment Share on other sites More sharing options...
