Mars Bar Cheesecake (yes it has Mars Bars in!)

I have just read the post about 'Snickerdoodles' and seen how disappointed the Omleteers have been because they do not contain Snickers! Well, this cheesecake has that other favourite confection in it, MARS BARS! I was quite dubious about it to start with, but it is really yummy, and not as sickly as you might imagine! I think the original version was all cream cheese, but I always use half Light Cream Cheese and Half Quark, and half fat digestives - it just makes me feel a bit better!

 

Mars Bar Cheesecake

Ingredients:

• 150g butter

• 250g crushed digestive biscuits

• 6 Mars Bars

• 125g cream cheese

• 125g curd cheese or quark

Method:

1. Melt the butter, add the digestives, mix thoroughly.

2. Spread mixture along the base of a tin. Put in fridge to chill

3. Meanwhile, simmer water in a saucepan. Chop up 4 of the Mars Bars, put in a heatproof bowl and place the bowl over the simmering water to melt the Mars Bars slowly.

4. Chop up the remaining Mars Bars and mix this into the melted Mars Bars along with the cheese.

5. Spread this mixture on top of the biscuit base.

6. Put in fridge until time to serve.

That made me laugh aloud......there are 6 Mars Bars in this recipe and you're reducing the cream cheese?!! :lol: You're my kinda girl.....I drink triple gins but with diet tonic water, so it's ok :wink:
