Christian
I have been asked to post the recipe, so here you go 1 litre white wine vinegar 250g soft dried figs, chopped fairly fine 75g runny honey 2 teaspoon dried thyme 1 teaspoon white peppercorns 1 x large sealable jar - approx 2 litres with vinegar proof lid, such as a kilner jar. 2 x 500ml sealable bottles. Sterilize you jar Put the vinegar into the jar and add the other ingredients Seal tightly and give it a good shake Put the jar into a dark cool cupboard for 4 days. Sieve into a large measuring jug and decant into your 2 sterilized bottles. Store in a cool dark place and use within a year. http://i122.photobucket.com/albums/o272/christianl_bucket/IMG_0090.jpg

The Spencers
Sounds really good. I'll be having a go! Do you use it for anything in particular? Do you think the sieved figs could be used as a base for a chutney?
