surferdog Posted November 27, 2008 Share Posted November 27, 2008 Recently discovered this recipe which makes an excellent rice pudding similar to the ones that come in cans but without the nasty additives. My lot don't like the 'one slice or two' type rice puddings that are baked in the oven but wolf this down. And even better it has eggs in it! This is supposed to serve four but ES1 and DD scoffed the lot and complained there wasn't enough so you might want to do a double batch. There's also quite a lot of stirring involved so good idea to make this when you are already doing stuff in the kitchen otherwise you'll be there staring at it! Creamy Rice Pudding 600ml milk 66g rice pinch salt 1 egg 50g sugar 1/2 tsp vanilla extract Mix milk, rice and salt in a pan an bring to the boil Simmer for about 20 minutes until rice is tender. Stir frequently to prevent sticking. Whisk together the egg, sugar and vanilla in a small mixing bowl. Add about a ladle full of the milk and rice mixture to the bowl about a tablespoon at a time, whisking to incorporate. (You don't need to be exact about this it just needs to be added slowly to stop the hot milk cooking the egg before you can whisk in.) Stir the eggy mixture back into the pan containing the rice and milk. Stir on a low heat for about 10 minutes until thickened. Once thickened turn off the heat and cover with a lid to prevent a skin forming. You can serve straight away or leave until you are ready to eat it. I made it this evening with half milk/half cream as we had some leftover from dinner and it was lovely. I usually make rice pudding in the oven but this version is much creamier and tastier. It was yummy! 1litre milk 200ml evaporated milk 150g pudding rice 80g sugar I programmed it for 30 minutes. It did all the heating, boiling & stirring for me & cleaned itself after! I presume you could make the recipe in a normal pan, but would have to stand over it watching & stirring.
