hillfamily Posted November 27, 2008 Share Posted November 27, 2008 I had a practice make of chocolate dipped peppermint creams at the weekend (in readiness for my Christmas Hampers) and they are very yummy but there in lies my problem.......they have all disappeared can't think where and I was trying to gauge how long they would stay fresh so I could plan when to make them for the hampers :D Does anyone know Anyway, here's the recipe..... 225g icing sugar, sifted the white of 1 large egg a few drops of peppermint oil 150g dark chocolate Beat the egg white until frothy but not stiff Gradually add the sifted icing sugar, mixing thoroughly with a wooden spoon until the paste becomes thick and smooth Shake some icing sugar on your work surface and put the paste in the middle. Add a few drops of peppermint oil and knead paste until smooth Divide the paste into small balls (about the size of a hazel nut), put them on a sheet of baking parchment, and flatten each one with the back of a fork Leave to harden for a few hours or overnight Melt chocolate and dip the peppermint creams until half covered, return to baking parchment and allow the chocolate to set store in an airtight container ..........far far away from me, in a locked cupboard Quote Link to comment Share on other sites More sharing options...

Mind you the way they will spread the icing to the four winds, there probably won't be any left!! (BTW I am not prepared to take my chooklies real fresh eggwhites into the Scout Hut in case some jobsworth parent decides my eggs aren't healthy enough!!!!) The recipe came from my little sisters primary school as they made them so it must have been easier to use milk instead of eggs. Have just marzipanned the christmas cake - which is now 4 smaller cakes to look like parcels - yes I am indecisive . I have been off poorly with Labyrinthitis - so can only just about get up and about now, and icing sugar was literally grabbed from the shelf when I last shopped b4 illness . Now you mention it, feel really bad - totally miffed with the whole cing thing to begin with, and now feel bad for causing offence. I though "what a good cheat" and then I started to wonder about the egg white. I was thinking to myself how all the icing sugar is always Silver Spoon brand and there is no alternative - I shop in Waitrose but there is no own brand icing sugar. Christian - do come and have a rummage - I'm sure you'll find a few hidden in there but the bonus will be that I'm also sure you'll tidy my cupboards at the same time! Don't worry Pengy - I am just a little sensitive at the moment - took it as jest, as it was meant. BTW - how do you make your own icing sugar - is that the thing where you blitz caster in the blender - if so I can always do that Christian - thanks for protecting me from the battery hen police - my crime was totally innocent .
