Chocolate Dipped Peppermint Creams

I had a practice make of chocolate dipped peppermint creams at the weekend (in readiness for my Christmas Hampers) and they are very yummy :drool::drool::drool:

 

but there in lies my problem.......they have all disappeared :roll: can't think where :whistle::liar::wink::lol::lol: and I was trying to gauge how long they would stay fresh so I could plan when to make them for the hampers :D :D

 

Does anyone know :?::D

 

Anyway, here's the recipe.....

 

225g icing sugar, sifted

the white of 1 large egg

a few drops of peppermint oil

150g dark chocolate

 

Beat the egg white until frothy but not stiff

 

Gradually add the sifted icing sugar, mixing thoroughly with a wooden spoon until the paste becomes thick and smooth

 

Shake some icing sugar on your work surface and put the paste in the middle. Add a few drops of peppermint oil and knead paste until smooth

 

Divide the paste into small balls (about the size of a hazel nut), put them on a sheet of baking parchment, and flatten each one with the back of a fork

 

Leave to harden for a few hours or overnight

 

Melt chocolate and dip the peppermint creams until half covered, return to baking parchment and allow the chocolate to set

 

store in an airtight container ..........far far away from me, in a locked cupboard :wink:

I have Cubs tonight - deep joy Cubs & cooking! :shock: - Could they use the left over packet Royal Icing to make these do you think, if I added a bit extra icing sugar maybe to thicken it up if needs be? Mind you the way they will spread the icing to the four winds, there probably won't be any left!! (BTW I am not prepared to take my chooklies real fresh eggwhites into the Scout Hut in case some jobsworth parent decides my eggs aren't healthy enough!!!!)

:D Am going to try these - how long do they store for - if you are giving as gifts, not scoffing in a corner :drool::lol::wink:

 

I made a second much much much larger batch 10 days ago and popped them, undipped in chocolate - I'll do that when they are ready to be given - in a lock lock box and they are absolutely fine :D :D

 

Managed not to eat them all yet and the last hamper goes out next week :wink::D:D

Have just marzipanned the christmas cake - which is now 4 smaller cakes to look like parcels - yes I am indecisive :wink: . Anyway - the icing sugar I got is All in one royal icing sugar - will this be ok - and do I still need to add egg white (on the packet it says it contains dried egg white) :?

yes but is it FREE RANGE egg white - or is the Royal icing one of those foods with "hidden" battery eggs?

Good point Pengy.........sadly I think (but not absolutely sure) it will be a hidden battery egg product

 

I've always made my own icing as I don't like shop bought icing - doesn't taste as nice

:oops::cry::cry::cry: O.M.G - sorry - did not mean to cause a stir.

 

I have been off poorly with Labyrinthitis - so can only just about get up and about now, and icing sugar was literally grabbed from the shelf when I last shopped b4 illness :( .

 

Now you mention it, feel really bad - totally miffed with the whole cing thing to begin with, and now feel bad for causing offence.

 

Sorry Buffie - I have had my Eglu and hens for 5 years now, and really should know better :notalk:

Goodness I wasn't having a dig at anyone - I was yelling for Buffie to put us straight. I though "what a good cheat" and then I started to wonder about the egg white. I was thinking to myself how all the icing sugar is always Silver Spoon brand and there is no alternative - I shop in Waitrose but there is no own brand icing sugar.

 

Christian - do come and have a rummage - I'm sure you'll find a few hidden in there but the bonus will be that I'm also sure you'll tidy my cupboards at the same time!

Don't worry Pengy - I am just a little sensitive at the moment - took it as jest, as it was meant.

 

BTW - how do you make your own icing sugar - is that the thing where you blitz caster in the blender - if so I can always do that 8)

 

Christian - thanks for protecting me from the battery hen police - my crime was totally innocent :angel: . Makes you wonder though - I did not even realise icing sugar had egg white already in it - mind you I don't use alot of it anyway :anxious:
