I know what you mean about the hidden eggs though, I didn't consider it til it was too late - all the Cubs had iced their cakes (which contain my chooklie eggs so are definitely happy eggs!). I thought that at least one of our mums would moan about using uncooked egg whites on their darling child's cake, hence the use of the packet mix. Rock and a hard place situation! Sha x P.S. That's right Sha.....only Royal Icing Mix and ready made, roll out Royal Icing (from what I can find out) Plain every day icing sugar doesn't contain eggs P.S. Don't worry Pengy - I am just a little sensitive at the moment - took it as jest, as it was meant. BTW - how do you make your own icing sugar - is that the thing where you blitz caster in the blender - if so I can always do that Christian - thanks for protecting me from the battery hen police - my crime was totally innocent . Makes you wonder though - I did not even realise icing sugar had egg white already in it - mind you I don't use alot of it anyway Sarah - I have a bag of Royal Icing in my cupboard - bought by mistake (Carl!) because the bag looked similar. It wasn't a conscious decision som don't beat yourself up over it You can blitz caster sugar in the processor, but it nver makes a very fine powder like bought stuff. I bought a box of ready roll Royal Icing when we went shopping as I can see that I'll not have time to make any at this rate. Hadn't even thought about the egg white . EDIT - the Dr Oetker "Ready to Roll RegalIce Icing" doesn't have any eggs in at all and is suitable for vegetarians so it looks as if it hasn't seen any battery hen eggs after all. I was cooking earlier and found one I bought at the weekend I have about 20 different kinds of sugar in there somehow Trouble is everything is thrown on top of each other in a big jumble, its soooo hard to find anything in there. ...... Rock and a hard place situation! Come on, most of the Mums probably wouldn't know HOW cakes are made without using ready made stuff - most people seem to think nowdays that making it yourself is odd! A girl at work (a rather rich girl actually) cooked a dinner last week for her family, it was a pre-christmas dinner as it was her dads birthday and they always have a christmas dinner for it. She was moaning that Sainsbury's didn't have any decent sized ready stuffed turkeys and she'd had to buy two. To go with these she had bought Aunt Bessies, roast pots, yorkshire pud, roast parsnips. I asked her how she could say she was cooking a dinner when clearly Aunt Bessie had done most of it! Then I asked why she didn't just get a caterer. I love cooking & baking, making jams & chutneys etc. I like messing & experimenting I suppose. It's all too easy to rely on convenience foods these days - but think of how many meals you can make at once, when you cook your own. I've done Parsnip soup tonight & there is loads! Much healthier too - as no preservatives (nasty things). Also done a cauliflower cheese - so easy & much cheaper than bought. Back to peppermint creams eh? I suppose you could also make orange creams if you used orange oil / essence? Or coffee creams, by using a bit of camp coffee. Oh one tip I have is to use an Aga to melt your chocolate - it's much easier than using a double saucepan - I've done both this year! I have the fork patterns on them & hubby has his beady eyes on them & worrying about packaging them. He rekons they will stick together & has been bothering his little head about this. So the discussion about my peppermint creams has gone back & forth across the table, about them sticking together. " they will not" I say! He only wants to polish a few off. I did have 50...but don't say anything! I've also made coconut ice, which is chilling in the fridge. Tomorrow I'll do some more gingerbread & ice my cakes, which I marzipanned a few days ago. Ygerna Posted December 21, 2008 Share Posted December 21, 2008 I have made something like this recently, only I used an egg free recipe ( ) as it was for someone I have never met and I know some people are a bit odd about raw egg, even just the white. Anyway, basically I added Condensed milk to the icing sugar, kept adding it in dollops until the icing sugar started to bind, added my colouring and peppermint oil and then worked it into a smooth ball. Then simply prepared as per normal PC's. I also make 'Vanilla Angels' which is simply icing sugar, condensed milk (as above) and Vanilla extract. I then use a very small (bite size) angel shaped cutter to cut out the angels. I have not chocolate dipped these as yet, only had them 'naked' but I think I will use white chocolate when I next make these. Quote Link to comment Share on other sites More sharing options...

Posted December 21, 2008 Share Posted December 21, 2008 I've just made these- a disaster I had to add extra icing sugar, & even then I ended up with a sticky mess & only 6 mega sizes PCs I wonder if I whisked my egg white enough I was worried about over-whisking it.
