..lay a little egg for me Posted March 20, 2009 Share Posted March 20, 2009 Have noticed a few requests for the famous lemon drizzle cake recipe, so thought I would post it once more (I am doing this from memory so please correct me if I got anything wrong): Take 3 (or 4 if small) eggs Weigh your eggs (aim for about 180g-worth of eggs) Whatever the eggs weigh, measure out the same weight each of butter, sugar and self-raising flour Cream butter and sugar Add zest of 1 lemon Add flour Bake at 180degrees C for about 40 mins depending on the tin size you choose When cooked, juice the lemon and mix the juice with 3 or 4 tablespoons of sugar, drizzle this mixture over the cooked cake while it is still warm and leave to cool in the tin. May I add that I usually make a glace icing with some of the lemon juice and icing sugar and use it to top the cake. fluffyknickers Posted March 27, 2009 Share Posted March 27, 2009 It is yummy but I think next time I will make it in a lager tin as it was too deep and i had to cook it for too long so went a bit dry.
