kneading bread

Me again with more bread questions!

 

Because I have my lovely new River cottage bread book I want to make more bread by hand and not use the bread maker (then see if I can put bread maker away as so many gadgets out at the moment thanks to this forum!).

 

I made two nice loaves the other day but hand and they are delicious.

 

I enjoyed kneading the dough but the next day my arms were in agony :oops: !

 

I have a Kenwood mixer with dough hook and I wondered if anyone just uses that for kneading and if its just as good (or nearly as good!!!) and how long you have to leave it to do it all for as this would be easier and free me up to do other things.

Hi,

 

I give mine a minute or so to mix all the ingredients then turn it up to speed 2 and mix for 10 minutes. I then turn it out into an oiled bowl, cover with cling film, leave it to rise for 40 minutes in an oven at 50 degreesC, knock it back, turn into a loaf tin with one of Lakelands liners in, cover with oiled cling film and leave in the oven again for about 20 minutes then remove the film, turn the heat up to 220 and cook for about 20 minutes.

Hi,

I use my kenwood to knead bread. My timings are slightly different.

for 2 pounds of flour I knead on min for about 2 mins then on 1 for a further 6-7 mins then prove untill doubled approx 1 hour then knead again on min for 2 mins then turn onto lightly floured surface to finish knocking back and shape. prove again until doubled approx 20 mins then cook.!!!

I use my Kenwood too and find that the results are far better than by hand.

 

I use min. speed for 1 minute then speed 1 for 4 minutes then take out the dough hook shape into a round and leave for about an hour and a half in the kenwood bowl with a plastic bag over the top. Then I remove the dough and flatten it with my fingertips then shape and prove again for about 1 hour then spray with water and bake for 35 minutes for an 800g loaf.
